greens and ham…

DSCN1734Do you like greens and ham? Do you like them here or there ? In a box, with a fox, in a house, with a mouse, here or there, would you eat them anywhere? The moral of this story kids is eating your greens a is cool again. As a kid I hated greens, I don’t know why other than it’s part of the kid code to not like them. On a good day greens can be dripping in bacon grease, literally soaked to perfection, on a bad day healthy people eat them raw, yuck. My hope is to meet somewhere in the middle, this is a recipe for two it makes just enough for 4 side servings, but it isn’t dripping in grease , but has lovely bacon flavor. I used a mixture of collard and mustard greens fresh from my Momma and Daddy’s garden, but if you just have one type of greens on hand that’s great. A crockpopt would be a great choice for cooking due to time being the key ingredient. You can’t rush the cooking process, so if you don’t have time to stand over the stove, just throw everything in the crockpot and just turn it on medium. I hope this inspires you to give greens another try, the list is long of all the healthy nutrients in them, vitamins A , K , E , C , calcium, iron, magnesium, and folates just to name a few. Greens for Two

4 slices bacon – chopped

1/4 of an onion – chopped

1/4 tsp red pepper flakes

1/2 tsp chicken bullion

pinch of black pepper – maybe 2 grinds if you use a pepper mill

6 C. of greens – washed – deveined

1 1/2 C. water

  • begin by slicing bacon and put into large soup style pot. let bacon begin to render on medium low heat.
  • once bacon is 1/2 way cooked, add in chopped onion, and saute until onion is almost tender. about 3 minutes.
  • add in red pepper flakes and chicken bullion and turn heat to lowest setting.
  • now fill up your kitchen sink with cool water. place all greens in sink and “mush” around to wash well. remove one green at a time from water, remove vein from green, just by pinching the stem that holds it together from the actual leaf of the green. place leaf of green into bacon pot.
  • once all greens are in pot. stir to coat greens with bacon. cover with lid and cook for 1 hour, stirring every 30 minutes.
  • continue to cook for 2 more hours, stirring occasionally.
  • serve and enjoy.

*if you plan on using a crockpot you don’t need to render bacon and onion, just throw all raw ingredients into pot , turn heat to medium and cook for 3 hours, stirring occasionally.DSCN1738

  1. I’m not a big fan of raw veggies either. I prefer them cooked. That’s why you rarely see me posting salad recipes. I think you get more benefits from cooked veggies than raw veggies. Anyway….I love veggies. I’ve been shying away from cooking collard greens because I didn’t know how. This is a great idea –a bit of bacon makes everything tasty! Thanks for sharing Sarah. 🙂
